52 Projects #19: Bad Shots of Good Food

This week’s 52 Project was a good one for the K A B L O O E Y family, even if the photo documentation is sorely lacking. These are really awful pictures of some healthy concoctions we cooked this week, Mooch and I. The first was a very good stir-fry (with like a tablespoon of oil) that I modified (what else is new?) from a weight-watchers recipe for Thai Chicken Stir-Fry. I added fresh asparagus, more garlic, cilantro, and subbed honey for the sugar. My trusty bottle of Sriracha graced the table, so we didn’t end up with a fire-breathing Moochie.



The second picture is off a brussels sprouts concoction I served on Barilla Plus Thin Spaghetti, which is really good and doesn’t taste like you’re chewing on twigs, like some other high-fiber brands. I blanched the sprouts, then popped them in the food processor with salt, pepper and some other spices. I then browned a bit of garlic and onion in a pan with three skinny little pieces of the precooked bacon I’ve been using to make BLT wraps for lunch. (70 calories worth of bacon with lots of excellent tomato and assorted greens from the garden, an 11 grams of fiber tortilla, and a tiny bit of spicy mayo made with Light Hellmans and the trusty Sriracha)

So bacon features prominently, but it’s a lot of flavor for the calories, and I didn’t have to add oil to the dish. Finished with fresh parmesan and a shake of red pepper flakes, it was a very tasty way to eat brussels sprouts that even the tot liked.

The third picture (truly awful; Mardi, I’m ashamed… ) is of our
new go-to dessert for avoiding the ice cream truck that mercilessly circles our block at dinnertime. Moochie and I have been making pops with frozen strawberries, cherries and fat-free yogurt every week. They’re so good I think they’ll be a staple around here all Summer.

Sorry all for the dashed off quality of this week’s project post, but it’s already Monday night, and I’m running late enough. And hey, I actually posted a recipe and kind of stuck to it, so that’s a project in and of itself, I figure.

Because I set the bar low.

Thai Chicken Stir-Fry


Thai Chicken Stir-Fry

Here’s a super quick, super tasty stir-fry that tastes authentically Thai. Serve with jasmine rice for the complete Bangkok experience.

1 Tbsp vegetable oil
1 pound(s) chicken breast, uncooked, boneless, skinless, chopped into 1/4-inch pieces
1 medium scallion(s), sliced
1 medium garlic clove(s), finely chopped
2 cup(s) green snap beans, each sliced into 3 pieces
1 Tbsp fish sauce
1 tsp soy sauce
1 tsp sugar
1/4 tsp asian hot sauce, such as chili paste*
1/4 cup(s) basil, fresh, leaves, Thai or Italian

Instructions

  • Place a large nonstick skillet over medium-high heat; add oil and swirl to coat pan. When hot, add chicken; sauté for 3 minutes.
  • Add scallions and garlic; sauté until quite fragrant, about 2 minutes. Add green beans, fish sauce, soy sauce, sugar and chili paste; sauté until green beans are crisp-tender, about 2 to 3 minutes. Add basil and cook for 1 minute more. Yields about 1 1/2 cups per serving.

Notes

  • *Adjust the amount of chili paste according to how spicy you like your food.

Trader Joes sells a bag of cut up stir fry veggies that is amazing.

How did you manage to eat so healthy over a holiday weekend?! Breen and I totally blew our diets between Double Down sandwiches, wedding food and a trip to the Waffle House. You food sounds and looks yummy. It's time for me to get playing in the kitchen again…just yesterday I stumbled across a recipe for roasted radishes with sesame…hmmm. By the way, my project is posted over at 52 Projects..finally!

Ack! I bought four boxes of popsicles (they were on sale for .88 cents a box)!

Four days later they are GONE!

In our defense 'tis summer her in AZ. And it's hotter than hell (already).

I think I only consumed three or four popsicles.

And yes I will be purchasing more, tis the season when the popsicle bill goes high, high, HIGH!

That all looks really good! I need to make some healthy yogurt pops for my kids…you know once I can turn the heat off. Yep, it's June 1st and the heat is on.

@J-Bern: grab random ingredients from Trader Joes, spritz non-stick pan with Pam, dump in said ingredients. Add hot sauce and serve over their microwave bags o' rice. Voila! I use a lot of their frozen basil and cilantro, I overdosed on the frozen chili lime turkey burgers (wasn't pretty), I use the packets of concentrated chicken stock in everything and they have super cheapo saffron. And some pretty good low-cal chicken sausages, crazily cheap blackberries and of course the super-solicitous hippy help that makes shopping with a kid very easy. Although they just cut out balloons! I guess the poor dumb birds kept choking on them. What's wrong with a little natural selection? Thin out the stupid birds and increase the intelligence of the species. (I'm kidding, of course. not into birdy eugenics)

@Connie: as Schultz used to say on Hogan's Heroes "I know… nothing."

@quirky: for 88 cents a box, we'd be making them into soups and putting between week old bread for sandwiches.

your recipes sound good…I love lots of veggies with pasta. the ices sound like a good idea…i might have to make some of those with almond milk (my little guy is allergic to dairy). we have one of those ice shavers which make the slushy kinda ices…they're pretty popular too…good for lemonade. i find it really hard to make food look good in a photo.

WW recipes are great, but I must admit, they do often need topping up with more vegies and flavourings. In fact, I have a recipe book that we are using now, with pretty plain recipes. And that is the beauty of it! Give me the basics and then we can be creative!!!
